Highly Efficient Sensors for Perishable fruit products to Evaluate the Role and Impact of technologies on nutritional Damage and Elaborate optimising Strategies (HESPERIDES)

Projektbeschreibung und Ziele:

Evaluating the impact of processing technologies of fresh and ready-to-eat fruit products on their anti-oxidant nutrient content is an important task to determine strategies for quality optimization and monitoring. Fruit product quality changes need to be examined by rapid methods. Fluorescence and absorbance spectrometry can provide efficient measuring techniques for monitoring polyphenol, vitamin and provitamin. However, these techniques must be adapted to the specific physicochemical characteristics of the products, and further evaluated taking into account their accuracy and feasibility.

In the present project, non-invasive spectral-optical methods for analysing fluorescent nutrients will be developed. Therefore calibrations including correction algorithms regarding the physico-chemical product properties will be built. Data acquired by means of conventional chromatographic techniques and spectral-optical methods will be used to measure the nutritional damage of fruit products due to environmental conditions, maturity, and minimally processing. Results of conventional and alternative methods will be compared. Feasible monitoring methods pointed out in the project will be outlined by means of technical requirement profiles for specific, inexpensive sensor solutions.
